The classic tragedy: a full, happy belly with a pot still quite full of rice that was waiting in the wings. The conundrum defies physics, but fret no more, as I bestow a recipe that will make you excited for leftovers — beyond the likes of fried rice.
*gasp*
Get your rice and let’s get going.
All you need is the following: coconut milk, green onions (or other alliums of choice), cooking oil (I go with coconut oil, for a taste of the tropics in Berlin), leftover rice, and maybe other leftover bits and bobs that are ready for their second coming.
The process is so simple, one could do it while on a zoom call (I won’t tell):
Get your favourite heavy-bottomed pot or pan
Pour a glug of oil into pan/pot
Fry alliums of choice (make sure to salt!)
Enter: leftover rice — use a spatula the un-bunch the bunched bits
Enter (stage left): coconut milk — enough to cover the rice
Mix mix mix, until everyone becomes friendly and marry together into one cohesive gloop
Throw in the additions (frozen broad beans and pumpkin seeds came out to play today)
Badabing-badaboom-you have yourself a meal!
Short and sweet, we’ve got ourselves some rice dressed in a whole new outfit.
